The Best Chocolate Fudge Brownies

Everyone likes different things from their brownie – I look for a chocolatey fudgey consistency; when you bite in and the flavour consumes your mouth the more you chew.  For other people it may be a chewy brownie or a cakey brownie.

If you cook them perfectly, don’t stir too much and don’t scramble the eggs you’ll make something amazing that you’ll never be able to go back.

Whats more, I’ve made other brownie before, spending time whisking eggs whites and folding in flour carefully etc but didn’t come out with anything as lovely as these.  These brownies were so easy to make with little skill needed!

The Best Chocolate Fudge Brownies


Makes 16 
200 dark chocolate (cubed)
200 g butter (cubed)
3 eggs
2 egg yolks
270 g light brown sugar
115 g plain flour
35 g cocoa powder


Melt the chocolate and butter on a low heat in a small saucepan.  Once completely melted, leave to cool.
In a measuring jug, whisk the eggs and egg yolks together.  Add the eggs to the cooled chocolate and butter (make sure it is cool enough, the last thing you want is scrambled eggs).
In a medium mixing bowl add the flour and sugar, sifting in the cocoa powder.  Mix together well make sure that you have got rid of all the lumps.
Add the chocolate mix to the flour and mix together.  Once all the flour mixture has just combined add to the tin and cook for 35 minutes.
Once out the oven, allow to cool and cut into squares.
