One of my colleagues at work mentioned the other day that she had had the most amazing pasta out, filled with exotic mushrooms and Stilton. I thought to myself how good it sounded and then decided I had to taste it; therefore my version was born.
I love Stilton but it is one of those cheeses that a lot of people don’t enjoy, I get it – it’s a strong flavour; but the use of the cheddar and cream in this pasta dish dulls down the strength of this and gives it a rounded creamy flavour.
I’ve never really experimented with exotic mushrooms but these were lovely. I love ‘everyday’ mushrooms in lots of things but these were good on another level. Yes, I’m not going to ignore that they are more expensive (they are classed as ‘extra special’ in our local supermarket) but you could always give this a go with some ‘normal’, more affordable mushrooms and I’m sure it would taste really good too.
I mention how amazing both the ingredients are, but both of them wouldn’t have the same power without one another. Its a perfect flavour combo which is why its so great. Oh and because its the definition of comfort food.
Creamy Mushroom and Stilton Pasta
275 g pasta
1 onion (diced)
1 clove of garlic (diced)
75 ml white wine
250 g of exotic mushrooms (sliced)
150 ml single or double cream
1/2 tsp thyme
100 g Stilton (crumbled)
50 g cheddar cheese (grated)
Grated Parmesan to top (optional)
