Sautéed Fruity Red Cabbage


A fabulous side that stands out on your plate and has a powerful taste. As soon as you add the cider vinegar it goes from the usual cabbage purple to an almost luminous but dark, glossy pink.  (See before and after pictures).

It doesn’t taste as you would expect; the tartness is masked by the sugar and it is very fruity.  The cabbage is the perfect host for all these flavours and adds a crunch too.


Ross challenged me a little while ago to buy the cider vinegar and make something with it.  Part of it, I’m sure, was because he loves cider and part of it was that he wanted to see me challenged. I hope you enjoy!


Sauteed Fruity Red Cabbage


Serves 4

1 onion (diced)

1/2 large/medium red cabbage (thinly sliced)

4 tbsp cider vinegar

3 tsp sugar

1 tsp mustard seeds


Fry your onion in a frying pan for 2 minutes in a little oil.  Then add your cabbage and saute for 5 minutes.

Add your cider vinegar, sugar and mustard seeds and season.  Cook for a further 10 minutes until cabbage is softened but still has a little crunch to it.
