Pulled gammon and lentil salad

This salad is so fresh and delicious.  It’s really good for you and it takes moments to throw together making it the perfect mid week meal.  Lentils are one of the main bulking ingredients in this salad; they are low in calories but will leave you feeling satisfied all evening.

To create my pulled gammon, I simply slow cooked a gammon joint and pulled the meat apart.  If you do a whole joint at once you can use the meat for several different meals. I then refrigerated until I was ready to use it. 

You can also buy pulled ham in shops if the above is too time consuming for you.


Pulled Gammon, Green Lentil, Egg and Rocket Salad


Ingredients – Serves 4
250 g pulled gammon
2 1/2 tbsp honey (dissolved in 5 tbsp of water)
250 g of green lentils (cooked)
150 g of cooked kale
1 tin of garden peas (200 g tin)
3 handfuls of rocket (roughly chopped)
1 red onion (finely chopped)
3 tbsp balsamic vinegar
4 boiled eggs


Add the lentils, peas, rocket and onion to a large mixing bowl.
Cook the kale briefly in salted boiling water for 2 minutes, then drain and leave to cool.
Cook the pulled gammon in the honey until it is all soaked up and slightly browned.  Add to the salad along with the balsamic vinegar and kale.  Season and combine.
Serve and top with the boiled eggs.
