This is the ultimate summer salad – its healthy, delicious and refreshing. The flavours perfectly balance and its so easy to make.
Sometimes money can be a little short on the ground but you can still have a filling, healthy meal. At one of the leading supermarkets this would cost 3.95 feeding 2 adults – most of the cost is created by the halloumi, so more beans and courgette could be added to add more bulk, or even adding cous cous or quinoa could make it go further? This is also something that can be made within minutes.
290 g tin of mixed bean salad
1 tbsp olive oil
250 g block of halloumi
1 bell peper
Rinse the beans through and add to big mixing bowl. Dice a pepper and add to the mixing bowl. Use a peeler to create very thin slices of courgette, and fry with the olive oil very gently for two minutes in a frying pan to soften slightly. Add to the mixing bowl and squeeze the juice of half a lemon and season with salt and pepper. Combine and plate up.
Slice the halloumi into thick slices and fry for 2 minutes on each side. Once soft place on top of the salad and serve.
Why do I love this salad? The contrast of the hot and cold in the salad works a treat and the halloumi almost tastes meaty when its a part of this dish. The saltiness in the halloumi contrasts the tartness of the lemon juice…AND…. all of these flavours seem from five minutes of cooking?!
