On Thursday night, I rustled up this tasty treat in no time at all. So simple, so quick, so tasty. Don’t underestimate how great this tastes.
My husband was SO unsure about trying this but he was proved wrong. These burgers could be served with chips, sweet potato chips or courgette fries. Give it a go.
Makes 4 stacks
4 fresh crusty bread rolls
4 tbsp houmous
1/2 an aubergine
250 g halloumi
1 tsp sugar
Chop the onions and fry in a small pan until soft, add a teaspoon of sugar and leave to fry for a further few minutes.
Cut the aubergine into thin slices and fry on a oiled griddle pan and fry both sides until soft. Meanwhile slice the halloumi into 8 pieces and add to the griddle alongside the aubergine.
Slice the rolls and spread the houmous on one side of the bun. Layer the aubergine slices, then the halloumi. Top with the fried onion and serve.
